Where’s the beef?


Betcha can’t guess what Natie’s eating in this photo? Friend and co-worker, who happens to be as fascinated by grease-ladened goodness as the Mr., once read about a “skin sandwich” that consisted of chicken skin that was sandwiched between white bread and slathered with mayo. Nate and I have been completely fascinated by idea since Jen proposed it. I happened to have a roasted chicken on had on hand and thought that in these times of economic hardship, what better way to use the crispy skin of my birdy? When the Mr. came home from a hard day at the hospital he was greeted by his very own delicious skinwich.
